A great homemade chicken soup with soba noodles.
Ingredients
- 2 tablespoons olive oil
- 0.25 medium onion , diced
- 4 cloves garlic , minced
- 3 medium carrots , chopped
- 2 stalks celery , chopped
- 2 containerss chicken broth , 32 fluid ounce
- 1 tablespoon curry powder
- 1 teaspoon salt , or more to taste
- 0.5 teaspoons ground black pepper
- 0.5 teaspoons ground white pepper
- 1 tablespoon butter
- 3 skinless , 5 ounce
- 4 packages dried soba noodles , 8 ounce
- 0.5 cups frozen peas

Heat oil in a stockpot over medium heat. Add onion and garlic and saute for 2 minutes. Add carrots and celery and saute for 2 more minutes. Add chicken broth and bring to a boil. Stir in curry powder, salt, and both peppers. Reduce heat to a simmer.

At the same time, melt butter in a skillet over medium-high heat. Add chicken and saute until golden brown and the juices run clear, 5 to 7 minutes.

Add cooked chicken to the simmering broth and return to a boil. Add soba noodles and peas; cook, stirring occasionally, until noodles are tender yet firm to the bite, about 5 minutes.

Stuffed Leg of Lamb with Balsamic-Fig-Basil Sauce
Dried plums and currants tossed with salted, roasted almonds, creme de cassis, and mint is the stuffing for my rolled lamb roast. It's a very easy way to dress up a lamb roast during the holidays. The simple herb rub adds just the right amount of seasoning along with fresh garlic inserted into the top of the roast. My balsamic basil fig sauce creation drizzled over the sliced lamb is the perfect finish touch and extremely flavorful thanks to the fresh basil.
Beef and Pork Guiso
My girlfriend's mom, Mama, makes this incredible guiso (stew) once a year and often includes it in a more intricate recipe, which doesn't allow us to appreciate the value of the guiso as is. It is good by itself, with rice or pasta, or with chips. I love it because it's awesome, incredible, and delicious.
