- 6 cups cubed seeded watermelon
- 0.5 reds onion , cut into thin half-moon slices
- 0.33 cups apple cider vinegar
- 2 tablespoons chopped fresh mint , or more to taste
- 0.5 teaspoons ground black pepper

Toss watermelon, onion, vinegar, mint, and black pepper together in a large bowl. Refrigerate until chilled, about 1 hour.
