These plump little almond cookies are easy to make and call for ground peanuts, corn flour, and vegetable oil.
Ingredients
- 0.75 cups roasted peanuts , finely ground
- 1 cup all-purpose flour
- 0.25 cups corn flour
- 1.25 cups confectioners' sugar
- 0.5 cups vegetable oil
- 1 egg yolk , Optional
Instructions
-
1
Preheat oven to 350 degrees F (175 degrees C). Line baking sheets with parchment paper.
-
2
Stir together the peanuts, flour, corn flour, and confectioners' sugar in a large bowl until well-combined. Make a well in the center of the peanut mixture. Slowly pour in the vegetable oil and mix with the peanut mixture to make a wet, slightly sticky dough. Pinch off about 2 teaspoons of dough per cookie, and roll into balls about 1/2-inch in diameter. Place the balls on the prepared baking sheets, and brush each with egg yolk, if desired.
-
3
Bake in the preheated oven until the cookies are golden brown, 6 to 8 minutes. Let cool on racks.

Shrimp Primavera with Goat Cheese
This dish is one of my favorites. If you like goat cheese it will become one of yours as well. I was inspired to make this dish after trying a similar one made with chicken at a local restaurant. Serve with a nice crusty loaf of french bread, a garden salad, and a glass of your favorite red wine!
Slammin' Salmon
An amazing culinary delight. This slammin' salmon is, hands down, the greatest grilled salmon ever. Easy and delicious.
Make-Ahead Moroccan Lamb Stew
This Moroccan-style stew with ground lamb was inspired by the wonderful spices and flavors used in Moroccan cuisine. We like to double the recipe and freeze one portion for later. We typically serve the stew with warm bread and a salad.
