'Tis the season to make everything pumpkin, including the ever-popular pumpkin chocolate chip cookies. But what if you reverse that order, making a chocolate cookie with pumpkin chips in it? Give it a try--you won't be disappointed!
Ingredients
- 1 cup white sugar
- 0.75 cups butter , softened
- 1 large egg
- 1 cup all-purpose flour
- 0.5 cups unsweetened cocoa powder
- 0.5 teaspoons salt
- 0.5 teaspoons baking soda
- 1 teaspoon vanilla extract
- 1 teaspoon almond extract
- 1.25 cups pumpkin spice baking morsels , such as Nestle® Toll House®
Instructions
-
1
Preheat the oven to 350 degrees F (175 degrees C).
-
2
Beat sugar and butter together in a large bowl until creamy, using a rubber spatula. Add egg and stir until well blended.
-
3
Combine flour, cocoa powder, salt, and baking soda in another bowl. Add to the sugar mixture a little bit at a time, beating well after each addition. Mix in vanilla and almond extracts until well combined.
-
4
Fold pumpkin chips into the dough. Line up teaspoon-sized scoops of dough on an ungreased cookie sheet. If desired, press in a few more pumpkin chips so they're more visible after baking.
-
5
Bake in the preheated oven until soft and chewy with golden edges, about 7 minutes. Transfer to a cooling rack.

Manduguk
This manduguk has a light beef flavor. It's just rich enough to make your lips a little sticky and you'll pick up on a subtle sweetness from the onions at the end. The fish sauce and sea salt impart umami in the soup, but it shouldn't overwhelm the beef broth or the other ingredients. All the add-ins, particularly the shredded beef, sesame oil, and nori, add savoriness without dominating each other for flavor. Serve with kimchi or steamed rice.

Easy Mint Chocolate Chip Ice Cream
This mint chocolate chip ice cream is made in an ice cream maker with milk, cream, sugar, peppermint extract, and lots of chocolate chips. I discovered using 2% milk in the recipe makes the ice cream taste lighter. Super refreshing on a hot summer day!
