- 1 shallot , minced
- 0.25 cups apple cider vinegar
- 0.25 cups sunflower seed oil
- 2 tablespoons Dijon mustard
- 0.5 teaspoons honey
- 0.5 teaspoons salt
- 0.25 teaspoons ground black pepper
- 6 cups Brussels sprouts , trimmed, halved, and sliced
- 2 Galas apples , cored and thinly sliced
- 0.5 cups dried cranberries
- 0.33 cups sliced almonds
- 0.33 cups raw sunflower seed kernels
- 0.33 cups shelled , raw pumpkin seeds
