This is one of my favorite recipes to make on Christmas morning, it's festive and so very tasty! The recipe is inspired by the classic holiday movie "How the Grinch Stole Christmas."
Ingredients
- 1 tablespoon vegetable oil
- 1 tablespoon butter
- 1 cup chopped onion
- 0.5 cups chopped green bell pepper
- 0.5 cups chopped red bell pepper
- 8 cups frozen hash brown potatoes , thawed
- 4 ounces corned beef , diced
- 1 teaspoon garlic powder
- 0.5 teaspoons salt
- 0.5 teaspoons ground black pepper

Heat oil and butter in a large nonstick skillet over medium heat. Add onion; cook for 5 minutes. Stir in bell peppers; cook for 3 minutes. Add potatoes, corned beef, garlic powder, salt, and pepper. Cook, stirring occasionally, until potatoes are golden brown and corned beef is browned, about 16 minutes.
