Flaked coconut is folded into a custard made with egg yolks and thickened with flour.
Ingredients
- 0.67 cups white sugar
- 0.33 cups all-purpose flour
- 1.67 cups milk
- 0.33 cups heavy cream
- 4 eggs yolks , beaten
- 1.5 cups flaked coconut
- 1 pie shell , 9 inch

Combine sugar, flour, milk and cream in a heavy saucepan. Cook over medium-high heat, stirring constantly, until thick and bubbly. Continue to boil for one minute. Remove from heat.

In a medium bowl, beat the egg yolks. Gradually stir in 1/4 of the hot mixture into yolks. Pour yolks back into remaining hot mixture stirring constantly. Cook, stirring constantly, for 2 minutes. Remove from heat and stir in coconut. Pour into baked pie shell.

Chill for several hours or overnight before serving.

Setting out to duplicate the coconut margaritas we had in Costa Rica, my first attempt was awful! I surfed the internet for a good recipe with little luck. I then took what I'd learned from my first nasty try and the ideas I picked up online and after about 5 or 6 attempts I came up with this. Enjoy!
