This is a fresh salad my husband and I eat a lot during the warm summer days. Garnish with peanuts or pine nuts.
Ingredients
- 1 tablespoon chopped fresh mint
- 2 teaspoons red wine vinegar
- 2 teaspoons water
- 1 teaspoon rose water
- salt and ground black pepper to taste

Whisk mint, vinegar, water, rose water, salt, and pepper together in a bowl until dressing is smooth.

Mix tomatoes, onion, cucumber, green bell pepper, and sun-dried tomatoes together in a bowl. Pour dressing over tomato mixture and stir to coat.

Original Bar Cheese Spread
This is as close as one can get to the famous restaurant 'bar scheez; spread my mother loved, Win Schuler'sยฎ. It became a staple in our house. The horseradish gives the spread that interesting bite. You'll have people begging you for the recipe and you won't be able to stop eating it! You can start with less horseradish and increase to your taste. Serve with crackers, pita or bagel chips, or pretzels. Even great with celery sticks! Store leftovers in refrigerator in airtight container.
Mini Ham and Swiss Frittatas
These little frittatas are so quick and easy, and my husband and kids just gobble them up. Make them in a 24 cup mini-muffin tin. I first had these at a neighborhood breakfast, and my neighbor added fresh onions and veggies, but this is great for making on nights when there isn't much in the fridge! Honey ham is good in these, as well. They can be served hot or cold and are great as reheated leftovers.
