This cucumber salsa is a great way to use all those summer cucumbers! Jalapeño adds a little zing and lime juice adds a refreshing burst of flavor.
Ingredients
- 2 medium cucumbers - peeled , seeded, and chopped
- 2 medium tomatoes , chopped
- 0.5 cups chopped green bell pepper
- 1 jalapeño pepper , seeded and minced
- 1 small onion , chopped
- 1 clove garlic , minced
- 2 tablespoons lime juice
- 1 teaspoon minced fresh parsley
- 2 teaspoons minced fresh cilantro
- 0.5 teaspoons dried dill weed
- 0.5 teaspoons salt
- 1 package tortilla chips , 12 ounce

Stir cucumbers, tomatoes, green pepper, jalapeño pepper, onion, garlic, lime juice, parsley, cilantro, dill, and salt together in a medium bowl; cover and refrigerate until chilled, about 30 minutes to 1 hour.
