This balsamic-dressed salad is so simple yet delicious with tomatoes and cucumbers straight out of the garden! This easy summer salad is made with just four ingredients, plus salt and pepper.
Ingredients
- 1 large cucumber , peeled and sliced
- 2 ripes fresh tomatoes , chopped
- 2 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- salt and pepper to taste

Place cucumber and tomatoes in a bowl. Pour in olive oil and balsamic vinegar. Season with salt and pepper. Toss gently to coat. Refrigerate until ready to serve.
