Ingredients
- 1 tablespoon olive oil , or as needed
- salt and ground black pepper to taste
- 2 delicatas squash , halved lengthwise and seeded

Preheat the oven to 400 degrees F (200 degrees C).

Drizzle olive oil on the bottom of a baking dish to coat. Season squash halves with salt and pepper; arrange in the prepared baking dish cut-side down.

Bake in the preheated oven until a fork easily pierces through skin and flesh, about 25 minutes. Flip squash halves and roast 5 minutes more.
