This copycat Chipotle rice, with lemon, lime, and cilantro, is easy to make at home, and tastes just like the restaurant version.
Ingredients
- 1 tablespoon olive oil
- 1.5 cups white rice
- 1 teaspoon kosher salt
- 3 cups water
- 1 bay leaf
- 1 tablespoon lime juice
- 1.5 teaspoons fresh lemon juice
- 2 tablespoons chopped cilantro

Heat oil in a medium saucepan over medium high heat. Add rice and salt and cook, stirring constantly, about 1 minute.

Add water and bay leaf and stir once. Bring to a boil, cover, and reduce heat to a low simmer. Continue cooking until liquid is absorbed and rice is tender, about 15 minutes. Remove from heat and fluff with a fork. Add lemon juice, lime juice and cilantro and stir with a fork until combined.
