Coquito is a creamy, tropical, Puerto Rican holiday drink with tons of coconut flavor. It's made with both evaporated and condensed milk, cream of coconut, spices, rum, and — in this version — egg yolks. It is always requested at my holiday gatherings. Sometimes I hide it in the fridge to keep for myself! Serve in glass cups and sprinkle with more cinnamon if desired. Feliz Navidad!
Ingredients
- 1 can evaporated milk , 12 fluid ounce
- 2 large egg yolks , beaten
- 1 can cream of coconut , 14 ounce
- 1 can sweetened condensed milk , 14 ounce
- 0.5 cups white rum
- 0.5 cups water
- 1 teaspoon vanilla extract
- 0.5 teaspoons ground cinnamon
- 0.25 teaspoons ground cloves
Instructions
-
1
Gather all ingredients.
-
2
Combine evaporated milk and egg yolks in the top of a double boiler over simmering water. Cook over the simmering water, stirring constantly, until mixture is thick enough to coat the back of a spoon, and reaches a temperature of 160 degrees F (71 degrees C).
-
3
Transfer mixture to a blender. Add cream of coconut, sweetened condensed milk, rum, water, vanilla, cinnamon, and cloves; blend until combined, about 30 seconds.
-
4
Pour into sterilized glass bottles and store in the refrigerator; serve cold or over ice, if desired.

Coconut-Tamari Mushroom Soup
A lovely creamy Thai mushroom soup without the cream. I had something similar to this at a local vegan restaurant that imposes a no-waste policy upon its patrons. I loved the soup, so when I got home I recreated it. It is incredibly simple to make, and incredibly delicious. I would also like to mention that it's best served with a dense bread to dip into the soup. I find olive bread or a spicy bread compliments well.
