Most people don't want chili in the hot, hot summer, but this chili is so good, you just might change your mind! Papayas and orange make a tasty addition to this yummy chili.
Ingredients
- 1 can black beans , 15 ounce
- 1 can pinto beans , 15 ounce
- 1 cup chopped ripe papaya
- 0.75 cups water
- 0.75 cups chopped red onion , divided
- 0.25 cups orange juice
- 0.25 cups chopped green onions
- 1 can chopped green chilies , 4 ounce
- 2 tablespoons hot salsa
- 2 tablespoons Cajun seasoning , or more to taste
- 2 tablespoons Italian seasoning
- 1 tablespoon garlic powder
- 1 teaspoon grated orange zest , or to taste
- 1 medium avocado , chopped
- 2 tablespoons chopped fresh cilantro

Combine black beans, pinto beans, papaya, water, 1/2 cup red onion, orange juice, green onions, green chiles, salsa, Cajun seasoning, Italian seasoning, garlic powder, and orange zest in a pot over medium heat; heat to almost boiling. Reduce heat and simmer for 10 to 15 minutes.

Gently toss remaining 1/4 cup red onion, avocado, and cilantro in a bowl; don't mash the avocado.

Ladle chili into 4 bowls and sprinkle with mixed topping.
