Popa's simple recipe for pickled eggs makes a great snack along with pretzels. For hotter eggs, pierce the yellow chile peppers with a sharp knife or add other hot peppers.
Ingredients
- 1.5 cups water
- 1 jar hot yellow peppers with brine , 12 ounce
- 1 cup white wine vinegar
- 2 tablespoons pickling spice , such as McCormick
- 1 tablespoon white sugar
- 2 teaspoons salt
- 1 teaspoon ground turmeric
- 8 hard-boiled eggs , peeled

Stir water, peppers and brine, vinegar, pickling spice, sugar, salt, and turmeric together in a ½-gallon mason jar or container. Add eggs; seal container. Refrigerate for at least 2 days.

Velveting chicken makes it as moist and tender as what's served at the best Chinese restaurants. This is not my technique — I got it online. Don't limit this chicken to just Chinese dishes.
