Guinness Bread
I made this Guinness beer bread after visiting my ancestral homeland of Ireland. It's a type of soda bread and great way to use delicious Irish stout in your baking! Serve with soup or warm with butter and honey.
Zucchini Spice Cake
This zucchini spice recipe is a dense cake reminiscent of carrot cake. I created the dish to make use of a bumper crop of zucchini and to get my kids to eat more fruits and veggies without them knowing it. I frequently add an extra cup of stir-ins — raisins, flaked coconut, and walnuts or pecans are favorites.
Simple Mint Chocolate Chip Strawberry Ice Cream
I was inspired to create this dessert because I could not eat traditional ice cream from the grocery store due to a potato allergy. This recipe creates a fresh and sweet treat with minimal sugar allowing you to indulge in fruit and chocolate, the best of both worlds! Store the remaining ice cream in a container in your freezer for later enjoyment!
