This tasty creamed peas and potato recipe came about after a local farmer suggested to me how to cook his new potatoes and peas!
Ingredients
- 1 pound baby red potatoes , quartered
- 1 cup shelled English peas
- 1 tablespoon butter
- 1 tablespoon all-purpose flour
- 1 cup milk
- salt and pepper to taste
Instructions
-
1
Place potatoes in a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 15 to 20 minutes. Drain.
-
2
Meanwhile, bring a medium saucepan of water to a boil; add peas and simmer until just tender, about 6 to 7 minutes. Drain and set peas aside.
-
3
Add butter to the same saucepan; melt over medium heat. Stir in flour to make a thick paste; gradually whisk in milk, stirring constantly until slightly thickened. Season with salt and pepper to taste. Add potatoes and peas; simmer, stirring often, until potatoes are heated through, about 5 minutes. Serve immediately.

Breaklava
My husband named this recipe Breaklava because I use phyllo dough, butter, and breakfast ingredients and layer it in a similar way you do for baklava. So it's breakfast baklava! You can use any combination of cheese to make it unique.
Homemade Pound Cake
This homemade pound cake recipe is buttery and rich with the flavor of shortbread cookies but still tender and light as a feather.
Blueberry Skyr Muffins
I fell in love with skyr when I visited Iceland a few years ago. It's a mild, thick yogurt and high in protein as an added bonus. I used blueberry-flavored skyr to make this blueberry skyr muffins recipe and it gave them such a tender texture!
