In June 2020, we were still dealing with the Coronavirus ravaging our country, making us a little stir-crazy. Luckily, the lockdown rules were easing in California, and my husband and I could host some good friends at our home for the weekend. The weather was heating up, and while we were spending the day by the pool (pretending we were at a far-off resort), my friend asked if I could make her a foofy drink. I went inside, took an inventory of my ingredients, and created the COVID Creamsicle cocktail recipe.

Roasted Beetroot and Garlic Hummus
This roasted beetroot and garlic hummus checks all the boxes: healthy, easy, delicious, and so pretty! It's the perfect snack throughout the week or a beautiful appetizer for guests. Garnish with a dollop of Greek yogurt and fresh herbs, and serve alongside veggies or pita. Enjoy!
Smothered Beef Short Ribs
No oven is needed for this beef short rib recipe. Instead, your stovetop does double duty, first in searing flour-dredged ribs, then in simmering them with vegetables and herbs in a savory mixture of wine and stock. This dish is great served over mashed potatoes.
Blueberry Rhubarb Crisp
I created this blueberry and rhubarb crisp because I still had tons of rhubarb hanging around in my freezer and I didn't want the go-to strawberry-rhubarb combination. It turned out amazingly! The tart taste of rhubarb is, not surprisingly, complemented by blueberry. Delicious with a scoop of vanilla ice cream.
