This creamy mashed sweet potatoes recipe is a not-so-sweet option for those who prefer sweet potato fries to sweet potato pies. I use organic ingredients, but it is not required!
Ingredients
- 4 large sweet potatoes , peeled and cut into 1-inch cubes
- 4 ounces Neufchatel cheese , such as Organic Valley
- 0.5 teaspoons sea salt , or to taste
Instructions
-
1
Place potatoes into a large pot and cover with cold water; bring to a boil. Reduce heat to medium-low and simmer potatoes until tender, about 20 minutes; drain and transfer potatoes to a large bowl.
-
2
Beat potatoes with an electric mixer until smooth. Add Neufchatel cheese; beat until smooth. Season with sea salt.

Bibi's Chicken Pot Pie
Not your usual chicken pot pie, this recipe adds a bit of sausage to the chicken, and I opted for vegetables that might not be in your mom's pot pie! In addition, the crust has some celery seed and paprika added, for some extra savory goodness, and it works well with cooked dark chicken. Serve with a salad and crusty bread for a complete meal.
Homemade Chili Sauce
This homemade chili sauce is made in a flash. It's a great substitute for bottled chili sauce.
Vegetarian Stout French Onion Soup
I love Irish stout stew and French onion soup. Plus my wife is a vegetarian. So I came up with this infusion that is, in my opinion, amazing! Portobello mushrooms replace cubed beef, and it is all topped off with a Swiss cheese-crusted slice of artisan bread, French onion-soup style. Serve with a frosty stout and enjoy! Happy St. Patrick's Day!
