A unique and delicious way to serve corn!
Ingredients
- 3 tablespoons butter
- 2 cups frozen corn
- 2 tablespoons chopped green bell pepper
- 2 tablespoons chopped onion
- 0.5 teaspoons curry powder
- 0.5 cups sour cream
- salt and ground black pepper to taste

Melt the butter in a skillet over medium heat; mix the corn, green pepper, onion, and curry powder into the melted butter, cover the skillet, and cook until the vegetables are just tender, 8 to 10 minutes. Stir the sour cream into the vegetable mixture, season with salt and pepper, and continue cooking until hot, stirring continually, 2 to 3 minutes. Serve immediately.

This is a great peanut butter fudge, that a friend of mine gave me a couple of years ago. It is VERY rich, hence the 8 dozen tiny squares. DEE-LICIOUS! I hope you enjoy it as much as I do, and that's saying a lot because I am a chocolate FIEND--but this has NO chocolate in it!
