This date haroset recipe is more of a confection than the typical fruit and nut paste, and very different from the apple-based variety. It can be stored, refrigerated, in a closed container for one week.
Ingredients
- 8 ounces chopped dates
- 1 cup golden raisins
- 0.5 cups red wine
- 0.5 cups coarsely chopped walnuts
- 1 teaspoon ground cinnamon
- 0.5 cups confectioners' sugar

Place dates and raisins in a small saucepan; add wine. Cook over low heat, stirring occasionally, until fruit breaks down and thickens into a soft paste. Cool.

Stir nuts and cinnamon into date paste mixture; form into small, bite-sized balls.

Roll balls in confectioners' sugar.

It sounds fancy, but budino simply means 'pudding' in Italian. This one is layered with shortbread crumbs and caramel, so if you dig deep, you get a sweet surprise in every bite. If you like, reserve about 2 tablespoons of the crushed cookies to sprinkle on top.
