This easy chicken, rice, and noodle soup features fresh mushrooms and rotisserie chicken. With only a few fresh veggies to chop, this is perfect for days when you are short on time in the kitchen.
Ingredients
- 2 tablespoons unsalted butter
- 1 small onion
- 1 stalk celery
- 6 babys carrots
- 4 ounces white mushrooms
- 8 cups chicken broth
- 2 cups rotisserie chicken
- 1 packet chicken flavor rice and pasta blend , 5.6 ounce
Instructions

Heat butter in a large stockpot over medium-high heat. Add onion, celery, carrots, and mushrooms. Cook until onions are translucent, about 4 minutes.

Add broth and chicken. Bring to a boil.

Add rice packet, reduce heat, and simmer 8 minutes. Turn heat off and let stand for 8 minutes. Ladle into bowls and serve.

This dip was the result of endless combinations to try to come up with some dip that I didn't have to cook for work. Serve immediately or it is even better if you leave it in the refrigerator overnight. Store in nonmetallic air-tight container. The only kitchen utensil you need is a food processor. Best with pita chips, crostini, or some kind of chip with less salt.
