A dead ringer for a chocolate cream pie, only without the dairy.
Ingredients
- 1 pound silken tofu
- 0.5 cups unsweetened cocoa powder
- 1 cup white sugar
- 1 tablespoon vanilla extract
- 0.5 teaspoons cider vinegar
- 1 prepared graham cracker crust , 9 inch

Preheat oven to 375 degrees F (190 degrees C).

Blend tofu with an electric mixer or in a food processor until smooth. Blend in cocoa, sugar, vanilla and vinegar. Pour into prepared crust.

Bake in preheated oven for 25 minutes.

Refrigerate for 1 hour before serving.

You may easily coordinate the three parts of the recipe (pasta, sauce, pita) to finish at the same time. This recipe works great as just a pasta dish if you want to make the pitas separately! If you want, you can saute some garlic and onions before you throw the eggplant chunks into the skillet.
