Pancetta Primavera Rigatoni
This pancetta primavera rigatoni really is a tremendous bowl of pasta. Thanks to the pancetta, it's rich and decadent, but thanks to all the herbs and veggies, it's also fresh and vibrant.
Feta Cheese Foldovers
Golden puffed pastries are filled with a feta cheese mixture. These can be made ahead, and popped into the oven after your guests arrive.
Carrot-Apple Muffins
Cooler weather has arrived, and as always, my mind wanders to fall produce with apples at the top of the list. These tender, lightly sweetened, moist muffins taste like carrot cake, spice cake, and apple cake combined. These muffins freeze well and can be quickly reheated in the microwave on a low temperature for a quick breakfast.
