I got this recipe from my mother-in-law years ago, and it has always been a family favorite. It is real good for potlucks as it is served right out of the pan.
Ingredients
- 1 package yellow cake mix , 18.25 ounce
- 1 package lemon flavored Jell-O® , 3 ounce
- 0.75 cups vegetable oil
- 4 eggs
- 0.75 cups water
- 0.25 teaspoons lemon extract
- 1 cup confectioners' sugar
- 4 tablespoons lemon juice

Combine gelatin mix and cake mix. Mix well.

Add next 4 ingredients - oil, eggs, water and lemon extract. Mix lightly.

Bake according to instructions on back of cake box.

To Make Frosting: Combine confectioners' sugar and lemon juice.

When cake is done, and while still hot, ice with frosting.

Panini sandwiches get their distinct look from the grill marks. I like to serve this grilled sandwich with soup or even salad. You can use this recipe to make multiple sandwiches. Just assemble them ahead of time, grill, and place in a warm oven until serving.
Roasted and Curried Butternut Squash Soup
This is my original recipe and can be either vegetarian or meat based. It also freezes well - just thaw, heat and add cream or yoghurt before serving. It's delicious and well worth the extra steps of roasting and pureeing. Enjoy!
