Store-bought marinated artichoke hearts are expensive, and they're consumed faster than the time it takes to open the jar. I created this recipe with simple ingredients you most likely have on hand. The artichokes are delicious by themselves, but feel free to experiment and make an artichoke salad.
Ingredients
- 1 lemon , juiced
- 2 tablespoons extra-virgin olive oil
- 2 cloves garlic , Optional
- 1 teaspoon Italian seasoning
- 1 teaspoon salt , or to taste
- 1 teaspoon ground black pepper , or to taste
- 1 , 14 ounce
Instructions
-
1
Combine lemon juice, oil, garlic, Italian seasoning, salt, and pepper in a jar. Seal the jar and shake until oil and lemon juice emulsify.
-
2
Remove the lid and add artichoke hearts. Seal again and shake until artichoke hearts are completely coated.
-
3
Serve immediately, or if you like them cold, chill in the refrigerator for at least 1 hour before serving.

Cheese Stuffed Olives
Will definitely impress others! To fill the olives, use a pastry bag or plastic baggie with the corner cut out. What works best is a cookie press. Also, you can use bottled roasted garlic, but I like to make my own.
Rhubarb Crunch
This old-fashioned rhubarb crunch is a childhood favorite. Serve hot or cold. We love it with milk or vanilla ice cream!
Big Mac Crispy Rice
In this Big Mac crispy rice recipe, all the flavors of your favorite burger sit atop a disc of pan-fried crisp rice. Both the meat and rice are infused with the signature special sauce, and American cheese, onion, lettuce, and pickles top it off. You'll never miss the sesame seed bun!
