This easy peach salsa recipe makes a great dip for tortilla chips or a topping for your favorite grilled meat; serve it cold or warm.
Ingredients
- 1 tablespoon olive oil
- 1 small onion , diced
- 12 grapes tomatoes , diced
- 2 cloves garlic , minced
- 2 large peaches , diced
- 1 tablespoon honey
- 1 tablespoon fresh lemon juice

Heat oil in a large skillet over medium heat. Add onion; cook until soft, 1 to 3 minutes. Add tomatoes and garlic; cook over medium-low heat about 5 minutes. Add peaches, honey, and lemon juice; cook until well combined, 2 to 3 minutes more.

Light-tasting salad with orzo, broccoli, olives, pine nuts, Parmesan, and feta. Perfect accompaniment to grilled meats. Can be served warm or cold. Leftovers are delicious the next day. Recipe was discovered on scuba vacation on Little Cayman Island.
