These easy sausage pancakes are ready in a few minutes - all you need is pancake mix and sausage patties and you have a yummy breakfast treat.
Ingredients
- 2 cups pancake mix
- 1.33 cups water , plus more as needed
- 3 tablespoons butter , divided
- 8 sausages patties
- syrup for dipping
Instructions

Combine pancake mix and water in a bowl and stir until just blended (there may be a few lumps).

Heat half of the butter in a large nonstick skillet over medium heat until melted.

Dip half of the sausage patties in the batter until evenly coated and place in the skillet. Cook undisturbed until lightly browned and slightly puffed, 2 to 3 minutes. Flip and cook until the pancake is cooked through, 2 to 3 more minutes.

Repeat with remaining batter and sausage. Serve with syrup if desired for dipping.

French Onion Soup Focaccia
I've taken all the best flavors of a classic crock of French onion soup and baked them into a light and fluffy focaccia. I like to use a small Dutch oven to cook the onions so the heat is evenly distributed and none of them scorch, which can make them bitter. If the onions seem to be sticking to the bottom of the pan, simply add one or two tablespoons of water and scrape up any brown bits. I love the classic flavor of Gruyère, but you could also use shredded sharp Cheddar! Herbes de Provence let me pretend I'm enjoying this in a chic Parisian café, but dried thyme works just as well if that's what you have on hand.
