This easy rhubarb sauce recipe is made with strawberry Jell-O for added flavor.
Ingredients
- 4 cups chopped rhubarb
- 1.5 cups water
- 0.5 cups white sugar
- 1 package strawberry-flavored gelatin mix , 3 ounce

Combine rhubarb, water, and sugar in a saucepan over medium-high heat; bring to a boil. Reduce the heat and simmer until rhubarb is soft, 15 to 20 minutes. Stir in gelatin mix.

Remove from the heat and let cool to room temperature, about 30 minutes.

Pour rhubarb sauce into a bowl. Serve immediately or cover and refrigerate for a chilled sauce.

Gluten-Free Waffles
So far this is the best I've come up with for waffles. They get a nice crispy outer shell in my waffle iron that I find delicious. Be warned: you have to like buckwheat to like these. Using half creamer and half milk is pretty awesome if you don't mind the extra fat/calories. You can substitute applesauce for the oil, if desired.
