This vanilla cake recipe is great for all occasions and easy to make. It's the best cake I have ever made! It's not too bland, and it's not too sweet. Slice the cooled cake through the middle to make two layers and frost as desired.
Ingredients
- cooking spray
- 2.67 cups all-purpose flour
- 1 cup white sugar
- 1 tablespoon baking powder
- 1 tablespoon vanilla extract
- 2 pinches salt
- 3 large eggs
- 0.75 cups milk
- 0.75 cups vegetable oil
Instructions
-
1
Preheat the oven to 350 degrees F (175 degrees C). Grease a 9-inch cake tin with cooking spray and line with parchment paper.
-
2
Mix flour, sugar, baking powder, vanilla extract, and salt together in a large bowl. Add eggs, milk, and vegetable oil; mix by hand or beat with an electric mixer on low speed until cake batter is smooth. Pour into the prepared pan.
-
3
Bake in the preheated oven until a toothpick inserted into the center of the cake comes out clean, about 45 minutes to an hour. Cool on a wire rack for 5 minutes. Run a table knife around the edges to loosen. Invert cake carefully onto a cooling rack and let cool completely before frosting with your favorite frosting.

Corn Salad with Lime Vinaigrette
I threw this salad together with ingredients I had in my kitchen one evening. This light and tasty alternative to a regular salad will accompany Mexican dishes perfectly. This also works well served as a dip with tortilla chips and tastes even better a day after making it. Serve as a side dish or as a dip with chips and salsa.
Banana Bread Pancakes
If you're a fan of our banana bread, then you're gonna love this, since it's based on that recipe. As easy as that is to make, these are even easier. I really think that this threads the needle between something that has the flavor of banana bread, but that is very close to the texture of a classic pancake. Top with butter and banana slices and serve with warm maple syrup.
Cauliflower Pot Pie
While some of you already hear the birds singing and see the flowers blooming, we're still cuddling up to fires in the fireplace and warm, cozy meals at night. Here is a great winter recipe for anyone who wants to relish a little bit more of that warmth before winter comes to an end.
