Hearty and satisfying and easy enough for a weeknight! Serve over rice or your favorite pasta and garnish with grated Parmesan cheese.
Ingredients
- 3 bone-in chicken legs with skin , 8 ounce
- 0.67 cups all-purpose flour
- 0.25 cups olive oil
- 1 medium green bell pepper , cut into 2-inch pieces
- 0.5 small onion , sliced
- 4 cloves garlic , sliced, or more to taste
- 0.5 teaspoons dried oregano
- 0.25 teaspoons red pepper flakes
- 0.25 teaspoons salt
- 0.25 teaspoons ground black pepper
- 1 jar roasted red pepper and garlic tomato sauce , 32 ounce
- 1.5 cups water , or as needed
Instructions
-
1
Dip chicken pieces in flour and shake off excess.
-
2
Heat oil in a 10-inch skillet over medium-high heat. Add chicken and brown well, 4 to 5 minutes per side. Remove chicken from the pan and set aside. Drain most of the oil from the skillet, leaving about 1/8 inch.
-
3
Add bell pepper, onion, garlic, oregano, pepper flakes, salt, and pepper to the skillet. Sauté, stirring constantly, for 2 minutes. Pour in spaghetti sauce and add enough water to thin mixture just a little; sauce will thicken as it cooks. Stir well and add chicken to the sauce. Spoon sauce over chicken to coat and bring to a simmer.
-
4
Cover, lower heat, and cook, turning chicken and scraping the bottom of the pan often, until chicken is no longer pink at the bone and the juices run clear, about 40 minutes.

Tia's Turkey Meatballs
Served over zoodles, these meatballs are savory and deliciously non-dairy. They pair perfectly with Tia's Roasted Marinara Sauce.
Slow Cooker Chicken and Lentil Soup
This crock pot chicken and lentil soup is a total cozy comfort food. I love letting the slow cooker do all the work! This soup packs in a ton of warm spices, and the chicken is just so incredibly flavorful and tender.
Focaccia di Recco
This is a delicious and super fun-to-make Ligurian flatbread. It's great served as is, but I like it with arugula that's been tossed in a little olive oil.
