These pumpkin cookies are extra easy to make with a cake mix. Very moist and full of flavor.
Ingredients
- cooking spray
- 1 can 100% pure pumpkin , 14 ounce
- 2 large eggs
- 0.5 cups applesauce
- 0.5 teaspoons vanilla extract
- 1 package spice cake mix , 15.25 ounce
- 1 teaspoon cinnamon
- 0.5 teaspoons ground nutmeg
- 0.25 teaspoons ground cloves

Preheat the oven to 350 degrees F (175 degrees C). Lightly grease 2 baking sheets with cooking spray.

Beat pumpkin, eggs, applesauce, and vanilla together in a large bowl until well combined. Stir in cake mix, cinnamon, nutmeg, and cloves until well blended and creamy. Drop by spoonfuls onto the prepared baking sheets.

Bake in the preheated oven until the tops are firm when lightly touched, 8 to 10 minutes. Cool on wire racks.

This strawberry spinach salad with balsamic is a great easy summer dish with many options for mixing and matching. Plus, the salad looks pretty fancy. You can throw in any summer fruit or berry with this mix. Blueberries and raspberries are a good choice, as are blackberries later in the season. The nuts are optional, but pecans or roasted almonds add a little crunch and more protein!
