This is a very simple vegan burrito that has a very good fajita flavor.
Ingredients
- 2 tablespoons vegan margarine , such as Earth Balance®
- 0.5 yellows squash , thinly sliced
- 0.5 greens bell pepper , diced
- 0.5 yellows onion , diced
- 0.5 cups diced jalapeno peppers
- 1 package cubed tofu , 12 ounce
- 3 tablespoons soy sauce
- 1 tablespoon garlic powder
- 5 flours tortillas
- 2 tablespoons vegan sour cream

Melt margarine in a large nonstick skillet over medium heat. Add squash, bell pepper, onion, and jalapeno. Simmer to your desired level of doneness, 5 to 10 minutes. Add cubed tofu. Cook and stir until heated through, about 2 minutes. Add soy sauce and garlic powder; cook about 5 minutes more.

Wrap tortillas in a moist paper towel and heat in the microwave on high until soft, about 30 seconds.

Spread a thin layer of vegan sour cream on each tortilla. Add tofu and vegetable mixture and roll up, burrito-style.

Best Beef Dip Ever
This beef dip recipe is a favorite with all my family and friends. I refuse to give them the recipe because it is so easy. I love it when they keep asking for it! I often throw all the ingredients into a slow cooker and head to work. We all eat it when we get in the door. The au jus is great. Add beef to lightly toasted buns, then dip away in the au jus.
Instant Pot Galbi (Korean-Style Short Ribs)
This version of delicious Korean beef short ribs dish for your Instant Pot or other multi-cooker pressure cooker will have the ribs falling off the bone! Soaking the ribs first is the traditional method. I recommend soaking for at least an hour, though traditionally, you would soak them for longer, changing the water after the first hour. If you don't have an Asian pear, an apple will do as a substitute. Serve over white rice.
Fried Kimchi
Kimchi is a popular Korean side dish featuring fermented cabbage. Other vegetables can be used and applied with the same fermentation process to produce a similar taste and different textures. In this recipe, I fry some kimchi to completely alter the taste and texture for a smoky doppelganger! It is so great with Korean barbeque and with plain old rice. It is certainly one of my favorites and so easy to make. Enjoy hot or cold! Sprinkle sesame seeds on top as a garnish.
