Brunch isn't complete without a mimosa! Try this tasty, tropical twist that uses freshly diced pineapple instead of orange juice, and you'll be hooked! I like to use Prosecco or Cava but feel free to use champagne. Adjust the pineapple puree to wine ratio to suit your tastes.
Ingredients
- 1 cup diced fresh pineapple
- 2 ounces triple sec
- 20 ounces chilled dry sparkling wine , or as needed
Instructions
-

Place diced pineapple and triple sec into a high-speed blender or mini food processor. Blend until smooth, 15 to 20 seconds.

Healthier Baked Chicken Breasts
Use whichever spice combinations you prefer. The key to baking white meat without it getting dry is topping it with butter and wrapping it in parchment paper. It locks in the moisture and is tender and juicy every single time. The paper absorbs most all of the butter so you are not actually consuming it.
Chocolate Raspberry Blintzes
It's a minor adjustment to the cheese blintzes located on the website. Sour cream complements the blintzes for dipping.
Zucchini Cookies
These zucchini cookies are moist, tender, and cake-like. They're perfectly seasoned with cinnamon and cloves. A tasty way to use some of that summer zucchini!
