This raspberry vinaigrette is a super quick-and-easy salad dressing to use up those extra raspberries in the summer. Adjust the amount of vinegar to suit your taste.
Ingredients
- 1 cup fresh raspberries
- 1 tablespoon white sugar or to taste
- 0.67 cups balsamic vinegar , or to taste
- 0.25 cups olive oil
- 1 tablespoon honey
- 0.5 teaspoons salt

Mix raspberries and sugar together in a bowl; set aside until mixture is juicy, about 10 minutes. Mash raspberries using a fork until liquefied.

Pour raspberry mixture into a clean jar with a lid; add vinegar, oil, honey, and salt. Cover the jar with a lid and shake until dressing is mixed well. Store in the refrigerator.

Emergency Chicken
This is a great recipe for a quick and easy entree. My wife, who is 8 1/2 months pregnant, had chicken thawing and asked me to cook since she was exhausted.
