This easy upside-down strawberry cake is one I have been making for a long time! I live in Florida and have access to strawberries for a few months at a time. Many of my friends and neighbors can't wait until I start preparing this sweet and delicious cake.
Ingredients
- 2 cups crushed fresh strawberries
- 1 package strawberry-flavored gelatin , 6 ounce
- 3 cups miniature marshmallows
- 1 package yellow cake mix , 15.25 ounce
- 1 cup water
- 3 large eggs
- 0.33 cups vegetable oil
Instructions
-
1
Preheat the oven to 350 degrees F (175 degrees C).
-
2
Spread crushed strawberries on the bottom of a 9x13-inch baking dish; sprinkle gelatin powder over strawberries, then top with mini marshmallows.
-
3
Combine cake mix, water, eggs, and oil in a large bowl; beat with an electric mixer on low speed until moistened. Increase speed to medium and beat for 2 minutes. Pour batter on top of marshmallows.
-
4
Bake in the preheated oven until a toothpick inserted into the center comes out clean, 40 to 50 minutes.
-
5
Cool cake in the pan for 15 minutes. Run a knife around edges, then turn out the cake onto a serving plate, strawberry side up. Store cake in the refrigerator.

Easy Brownie In A Mug
I love this recipe, especially while babysitting younger kids (they love this) and during the hot summers (when it's unbearable to turn the oven on). It's quick, easy and clean.
Cran-Apple-Pear Sauce
A blend of whole berry cranberry sauce, apple pie filling, and sliced pears. Perfect for Thanksgiving and Christmas. Goes great with ham, turkey or chicken. Yum! Simple but delicious -- you'll get many compliments. Just don't tell anyone how easy it was! This makes a lot. You can halve it, but will end up with 1/2 a can of apple pie filling. (Although, it probably wouldn't hurt to put in the entire can.)
