If you have some fruit you want to use up, and you don't have all that much time, this sponge cake with fruit on top is perfect. Especially on a summer day, this is a great dessert after a BBQ. Any combination of fruit works in this versatile treat.
Ingredients
- 0.33 cups vanilla flavored syrup
- 1 sponge cake
- 1 cup blueberries
- 1 cup sliced strawberries
- 1 , 12 ounce
Instructions

Drizzle vanilla syrup over top of sponge cake. Let soak for 5 to 10 minutes.

Arrange blueberries on top of cake, then place strawberries on top of blueberries. Finish by generously spreading whipped topping over fruit.

Serve immediately or chill in the refrigerator (no more than 2 to 3 hours) until ready to eat.

Chicken Florentine Casserole
This chicken Florentine casserole recipe can also be adapted with fish or shrimp. It lies on a bed of spinach leaves and mushrooms. It has a creamy white sauce mixed with garlic, Parmesan cheese, and Italian seasonings and is topped with baked mozzarella.
Almond and Parsley Salsa Verde
The reason I'm calling this salsa verde and not pesto is because whenever you say pesto, people instantly think of the traditional version with the pine nuts and basil. I'm using the term salsa verde the way it's used around northern California. It's a very generic term for any fresh green sauce, usually starring some type of herb, but also can be made with spinach, arugula, etc.
Pumpkin Cookies with Caramel Frosting
These soft, cake-like pumpkin cookies smell wonderful and are a great reminder of autumn. The recipe came from my great-grandmother and yields a small batch, so we sometimes double it. The caramel frosting is glaze-like and quite thin, so it helps to place the cooled cookies on waxed paper while frosting. I usually use an entire can of pumpkin, rather than letting a small portion of it go to waste. Store in an airtight container for very soft cookies, store in a loosely covered container for firmer cookies.
