A gluten free peach cobbler that tastes just as delicious as the regular version. I like to make this in the summer with fresh peaches, but you can use frozen or canned. I tried different versions for the topping, and this recipe is the best.
Ingredients
- 4 cups chopped fresh peaches
- 2 tablespoons white sugar
- 2 tablespoons gluten-free all-purpose baking flour
- 1 teaspoon ground cinnamon
- 0.5 teaspoons ground nutmeg
- 0.25 cups unsalted butter , cut into small pieces

Gather all ingredients. Preheat the oven to 350 degrees F (175 degrees C).

Mix peaches, sugar, flour, cinnamon, and nutmeg together in a bowl.

Pour into a 9x13-inch casserole dish and dab butter pieces over top.

To make the topping: Mix flour, sugar, soy milk, baking powder, xanthan gum, and salt together in a bowl. Sprinkle over peaches in the baking dish.

Bake in the preheated oven until fruit is bubbly and the top is golden brown, about 45 minutes.

Let cobbler cool before serving.
