Holiday cookie bar like no other.
Ingredients
- 3 cups all-purpose flour
- 1.5 cups butter , softened
- 1.5 cups powdered sugar
- 6 eggs , separated
- 1.5 cups white sugar
- 2 teaspoons rice vinegar
- 2 teaspoons cornstarch
- 0.75 cups raspberry preserves , or to taste

Preheat the oven to 350 degrees F (175 degrees C).

Beat flour, butter, powdered sugar, and egg yolks together in a large bowl. Press into the bottom of a 9x13-inch baking pan.

Bake in the preheated oven until lightly golden, about 12 minutes.

Meanwhile, beat egg whites with an electric mixer until foamy. Gradually add white sugar, continuing to beat until stiff, shiny peaks form. Fold in rice vinegar and cornstarch with a spatula.

Remove crust from the oven; cover with jam. Spoon meringue over the top. Continue baking until meringue is golden brown, about 25 minutes. Let cool completely before cutting into bars.

Asian Cabbage Salad
This Asian cabbage salad is more like a slaw as it's made with shredded cabbage and carrots. Crushed ramen noodles and toasted sesame seeds give it extra crunch factor. It's tossed with a delicious sesame oil and rice vinegar dressing.
Christmas Plum Pudding
This is a fairly basic British Christmas plum pudding recipe but unlike other recipes it can actually have plums in it. Unfortunately the ingredient list is so long, it isn't easy to make it in less than industrial quantities! You can substitute a mixture of fresh and dried apricots, peaches, etc. for the plums and milk for the ale if you wish. Serve with brandy or rum butter.
Crystallized or Candied Ginger
Crystallized ginger can be served with espresso and cake or champagne and fruit, coated in bittersweet chocolate and rolled in hazelnuts or macadamia nuts. It can be chopped or julienned to use in or as a garnish for pastries, pumpkin pies, stewed fruits cookies, and many other desserts. Store in an airtight container in a cool and dark place.
