My grandma has been making this calamari salad recipe for our Christmas Eve dinners all these years.
Ingredients
- 2 lemons , juiced
- 6 cloves garlic , peeled and minced
- 1 sprig fresh parsley , chopped
- salt and pepper to taste
- 3 pounds squid , cleaned and sliced into rounds
- 4 stalks celery , chopped
- 1 can pitted black olives , 2.25 ounce
Instructions

Mix together lemon juice, garlic, and parsley in a medium bowl. Season with salt and pepper; set aside.

Bring a medium pot of water to a boil. Stir in squid and cook until tender, about 3 minutes. Drain.

Add boiled squid, celery, and olives to lemon juice mixture; stir to evenly combine. Cover and chill in the refrigerator until serving.

A wonderful oven-roasted BBQ pulled pork in a Dutch oven that can be made with any pork roast. Low-and-slow roasting up above the juices is the key. Serve by itself or on buns. I like mine with coleslaw and a root beer-BBQ sauce on multigrain buns. Baked beans are a nice side dish, too.
