Cowboy Queso
This cowboy queso is a cheesy, meaty, stick-to-your-ribs queso. Feel free to use chicken broth or beef broth instead of beer. I grew up with sliced black olives in many dishes so they work for me, but omit them if they're not your thing. I like to serve this in individual cast iron skillets for the full "cowboy" experience but any serving dish will work.
Easy Pressure Cooker Pot Roast
This pressure cooker pot roast is incredibly tender and delicious. Using a pressure cooker saves time, so you can make this pot roast during the week and still manage to eat dinner at a decent hour!
Killed Lettuce and Onion
My mom's killed lettuce recipe is very simple and basic. Growing up in the North Carolina mountains, everyone knew what killed lettuce was and how to fix it. In the South, it is usually served with pinto beans and cornbread.
