This blueberry buckle recipe makes a 9x13-inch cake. It was handed down to me by my grandmother. I always make it during blueberry season. My guests just love it!
Ingredients
- 1.5 cups white sugar
- 0.5 cups butter , softened
- 2 large eggs
- 4 cups all-purpose flour
- 4 teaspoons baking powder
- 0.5 teaspoons salt
- 1 cup milk
- 4 cups fresh blueberries
Instructions
-
1
Preheat the oven to 375 degrees F (190 degrees C). Grease a 9x13-inch baking dish.
-
2
Make buckle: Beat sugar and butter together in a large bowl using an electric mixer until creamy and smooth. Add eggs one at a time, mixing well after each addition. Whisk flour, baking powder, and salt together in a separate bowl until well mixed; stir into egg mixture, alternating with milk, until just combined. Fold in blueberries until evenly distributed. Pour batter into the prepared dish.
-
3
Make topping: Combine sugar, flour, and cinnamon in a medium bowl. Cut in cold butter using a pastry blender or 2 knives until crumbly. Sprinkle evenly over batter.
-
4
Bake in the preheated oven until a toothpick inserted into the center comes out clean, 40 to 45 minutes. Cool on a wire rack.

Fig and Olive Tapenade
This is an easy gourmet appetizer. I've brought this to several parties and it is always a hit! I often add some chopped green olives to the olive mixture and a little more balsamic. Goat cheese may also be used in place of the cream cheese. Serve with slices of French bread or crackers.
