Grandma's drop sugar cookie recipe is my family's favorite Christmas cookie. Buttery and crispy, the slight coconut flavor makes this the best cookie.
Ingredients
- 2 cups white sugar
- 2 cups butter , softened
- 3 cups all-purpose flour
- 1 cup coconut flakes
- 1 teaspoon vanilla extract
- 1 teaspoon salt
- 0.5 teaspoons baking soda

Preheat the oven to 350 degrees F (175 degrees C).

Beat sugar and butter together in a bowl with an electric mixer until smooth and creamy. Mix in flour, coconut flakes, vanilla extract, salt, and baking soda until dough is smooth.

Drop spoonfuls of dough onto a baking sheet.

Bake in the preheated oven until edges are lightly browned, about 10 minutes.
