This is a family favorite! Macaroni, shrimp, and veggies make up this delicious salad!
Ingredients
- 1.5 cups elbow macaroni
- 0.75 cups mayonnaise , such as Best Foods®
- 1 large cucumber , diced
- 0.5 cups frozen peas
- 2 ribss celery , diced, or more to taste
- 4 radishes , sliced, or more to taste
- 3 greens onions , chopped, or more to taste
- 1 teaspoon seasoned salt , such as Season-All®
- 1 pound cooked medium shrimp
- 3 hard-boiled eggs , sliced, or more to taste
- 1 small avocado , sliced
- 1 medium tomato , sliced

Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally, until tender yet firm to the bite, about 8 minutes. Drain and pour into a salad bowl.

Add mayonnaise, cucumber, peas, celery, radishes, green onions, and seasoned salt to the macaroni; toss well. Add shrimp last. Garnish with hard-boiled eggs, avocado, and tomato.

This sweet macaroni salad is, by far, the best I've ever put into my mouth. It has a perfect blend of sweet and tart and is so pretty, thanks to numerous multi-colored veggies. But be ready for this to disappear before you put it on the table. I have 6 children, and it is all I can do to keep them from nibbling on it while I make it.
Filipino Lumpia
My Filipino stepmother made these delicious lumpia on special occasions. You can find frozen lumpia wrappers at Asian grocery stores or use egg roll wrappers as a substitute. Serve with banana ketchup if you can find it.
