Escarole Siciliano
This lemony salad is served hot from the wok. Escarole is a bitter green, but can be less so when grown shielded from the sun. In general, lighter green leaves indicate a milder flavor. Thinly sliced tomatoes are a great accompaniment. This recipe can be doubled. For a larger party, cook in batches.
Blueberry Yogurt Pound Cake
This recipe turns a boxed cake mix into a scrumptiously moist low-fat coffee cake or dessert.
Schwabischer Kartoffelsalat (German Potato Salad - Swabian-Style)
Living in southern Germany, this is one recipe that I had to get before we got back to the States. This style of potato salad is served at every restaurant and is in all the grocery stores. I got this recipe from one of my German friends, so this is an authentic German potato salad and tastes excellent!
