My dad loves meat and potatoes, so these bacon-wrapped "baked" potatoes sprinkled with brown sugar and pepper really make his day!
Ingredients
- 4 bakings potatoes , scrubbed
- 1.25 teaspoons salt
- 12 slices bacon
- 2 tablespoons olive oil for brushing
- 1 cup brown sugar
- 2 tablespoons freshly ground black pepper

Preheat an outdoor grill for medium-high, indirect heat.

Cut each potato into 5 thick slices, without cutting all the way through. Place potatoes onto squares of aluminum foil.

Sprinkle 1/4 teaspoon salt into the sliced areas of a potato, then wrap potato with 3 slices of bacon, securing with toothpicks if needed. Brush potato with about 1 1/2 tablespoon olive oil, then sprinkle with 1/4 cup brown sugar and 1 1/2 tablespoons black pepper. Wrap potato loosely in the foil. Repeat to prepare remaining potatoes.

Grill potatoes on the preheated grill over indirect heat until bacon is crisp and potato is soft in the center, 30 to 45 minutes.
