Sounds crazy, but you will never enjoy 'normal' meatloaf as much as this!
Ingredients
- 1.5 pounds ground beef
- 1.5 pounds ground pork
- 2 cups dry bread crumbs
- 1 cup finely chopped sweet onion , such as Vidalia®
- 1 egg , beaten
- 1 teaspoon Worcestershire sauce
- 1 teaspoon minced garlic
- 1 teaspoon dried tarragon
- 1 teaspoon sea salt
- 1 teaspoon ground black pepper
- 0.5 cups barbeque sauce
- 0.5 cups ketchup
Instructions
-
1
Preheat an outdoor grill for medium heat, and scrape the grates clean. Spray grates with nonstick cooking spray.
-
2
In a bowl, mix together the ground beef, ground pork, bread crumbs, onion, egg, Worcestershire sauce, garlic, tarragon, sea salt, and black pepper. Divide the mixture in half, and form 2 loaves, each about 4 inches in diameter and 6 inches long. In a small bowl, mix the barbecue sauce with ketchup until well combined.
-
3
Place each meatloaf directly on the prepared grill grates, then spread each with about 3 tablespoons of barbecue sauce mixture; grill until the loaves reach an internal temperature of at least 160 degrees F (73 degrees C), about 1 hour.

Mexican Style Corn
On the streets of Santa Maria, California, street vendors (think an ice cream man with a 'trash can' full of hot corn on the cob instead of ice cream) roam the sidewalks selling corn on the cob for a dollar an ear! They slide a wooden skewer in one end for you to hold the corn. We crave it often and it's become a regular on our Saturday grill nights! Give it a try. You'll be surprised!
Baked Scalloped Potatoes
Baked scalloped potatoes with mushroom soup go well with any entrée, whether fancy or plain. Use whatever type of condensed cream soup you like — I normally switch it up based on what I'm serving it with.
