This grilled corn salad made with roasted corn, garden-fresh vegetables, and cilantro makes the perfect side dish for any BBQ or hot summer day.
Ingredients
- 6 earss freshly shucked corn
- 1 medium green bell pepper , diced
- 2 medium Roma , plum
- 0.25 cups diced red onion
- 0.5 bunches fresh cilantro , chopped, or more to taste
- 2 teaspoons olive oil , or to taste
- salt and ground black pepper to taste
Instructions
-
1
Preheat an outdoor grill for medium heat and lightly oil the grate.
-

-
3
Holding a corn cob over a large bowl, use a knife to carefully slice warm kernels directly into the bowl; discard cob. Repeat with remaining corn.
-
4
Add bell pepper, tomatoes, onion, cilantro, olive oil, salt, and pepper; toss until evenly mixed. Let sit until flavors have blended, at least 30 minutes.

Spanish Tortilla
Great for breakfast or brunch. My version of this classic dish combines eggs with delicious potatoes, bacon, onion, and bell peppers in a very short time.
Air Fryer Sauteed Onions
Air fryer sauteed onions add a lot to burgers, sandwiches, tacos, fajitas, or even rice or mashed potatoes. I like them as a topping for steaks—the possibilities are endless.
Chicken and Chourico Pizza
My mom always made pizza with chourico growing up and I loved it. I have redone it and added more protein - chicken! I love homemade pizza.
