These ham and egg noodles, or Schinkennudeln, are a bit like a German play on Italian carbonara, with ham as the star. It's a quick, easy, and fun side dish.
Ingredients
- 6 ounces egg noodles
- 2 eggs
- 2 tablespoons heavy cream
- 1 tablespoon water
- 2 tablespoons butter
- 4 ounces SPAM®
- 0.5 whites onion
- ground black pepper
- 1 tablespoon fresh parsley

Fill a large pot with lightly salted water and bring to a rolling boil. Stir in noodles and return to a boil. Cook pasta uncovered, stirring occasionally, until tender yet firm to the bite, 7 to 9 minutes. Reserve about an 1/8 cup of the pasta water and set aside.

Add eggs, cream, and water to bowl; whisk to combine. Season with black pepper.

Heat butter in a large skillet over medium heat. Add Spam or ham and cook until lightly browned, about 3 minutes. Add onion and cook until onion is translucent, about 5 minutes more.

Stir cooked noodles into skillet. Pour egg mixture in and stir until eggs are set. Remove to a plate, sprinkle with parsley and enjoy!

Sarah's Frozen Pumpkin Spice Cocktail
I like blended and frozen drinks, so after trying the limited edition Kahlua® pumpkin spice holiday flavor I decided to see what I could come up with. It is delicious! Please use heavy whipping cream. It is available in small pint-sized containers. It is not much, but it adds a necessary creaminess to the drink texture. The pumpkin puree also adds to the pumpkin flavor. Feel free to garnish as desired with additional pumpkin spice, whipped cream, or both. Enjoy!
Ham Chowder
I made this ham chowder recipe with leftovers I had one day. It's a ham- and potato-based soup with leeks, onions, rosemary, cream, bacon, and carrots. The ham and bacon give this soup a smoky taste while the cream gives it a rich texture. Chowder is better served the next day.
Erika's Ginger Beef
Despite the prep work, this dish isn't too hard to make and it tastes amazing. Add more or less ginger and chiles to suit your taste. This is best served over rice.
