This ricotta pie has a sweet crust and mini chocolate chips in the sweet and silky filling. My in-laws are Italian and they say that this is the best pie. It is always requested for Easter and Christmas.
Easy Passover Lasagna
This is a "dairy" main meal for Passover that reheats well. Even the pickiest eaters love this easy lasagna recipe. Vegetables like mushrooms, zucchini, and peppers can be added; steam them al dente first and add them to the layers. Italian cheese blend can be used in place of mozzarella if desired.

This easy chicken Caesar pasta salad is a summertime favorite. We sometimes make it with shrimp instead of chicken.
