This healthy potato recipe is made with less olive oil and more fresh herbs than other roasted potato recipes. It's a healthy hit with everyone.
Ingredients
- 4 large potatoes , peeled and cubed
- 1 tablespoon olive oil
- 1 tablespoon minced garlic
- 1 tablespoon chopped fresh basil
- 1 tablespoon chopped fresh rosemary
- 1 tablespoon chopped fresh parsley
- 0.5 teaspoons red pepper flakes
- 0.5 teaspoons salt

Preheat the oven to 475 degrees F (245 degrees C).

Place potatoes into a large bowl. Add oil, garlic, basil, rosemary, parsley, pepper flakes, and salt; toss until potatoes are evenly coated. Transfer to a rimmed baking sheet or roasting pan and spread in an even layer.

Roast in the preheated oven, turning occasionally, until potatoes are browned on all sides, 20 to 30 minutes.
